Blog #4- Whole30 & Crave Health - 30 Day Reset Update


We don't have much to report, since I was a day late on the last blog post. The meal prep we did on Monday worked out amazing! I haven't been spending as much time in the kitchen after work, and I feel like I can actually spend quality time with this little family of ours. 

Favorite preps so far include the Pesto Pepper Frittata with Squash (seen in video above), Butternut Squash with a hint of cinnamon & Carrots with EVOO S&P! I recommend keeping it simple with your meal prep, things you would actually LIKE to eat but things you can make all together in the oven, or on the grill.

Pesto-Pepper Frittata with Squash

 1 Cup firmly packed fresh basil leaves

1/4 teaspoon pine nuts or chopped walnuts
(options to toast them)

3 cloves garlic, chopped

1/4 teaspoon coarse salt

1/4 teaspoon black pepper

4 Tablespoons extra-virgin olive oil

1 small red or green bell pepper

1/4 cup very thinly sliced onion

6 large eggs

1/2 cup thawed frozen pureed butternut squash
